The last total solar eclipse visible in south east Michigan was in 1806 and the next one will be in 2099. This is a ONCE IN A LIFETIME opportunity!<div>We had an Annular Eclipse in 1994 that was visible from our area and lucked out with clear skies that day. I started exercising 2 years after I changed my lifestyle, so the improvement isn't due to that. It is absolutely the decision to go vegan and eat healthy. My blood pressure is now 100/72 and my cholesterol is 143. That's with no meds at all. This works for me!</div><div><br /> It's winter, but summer is rapidly approaching. No animal products at all. Now I do a little exercise, not because I like it, but because I should and I can. Honestly, I feel great!</span></div><div><span style="font-size: small;">I had a conversation with a patient today who underwent gastric bypass surgery about 16 months ago. He's lost 125 lbs! All he had to do was find a doctor, get all the pre surgical lab work, EKG, stress test, Psychological evaluation, prove that he failed at a structured diet and exercise program, meet with a Dietician, quit smoking for 6 months, follow the Dietician's food program for 6 months, go to the hospital for 4 days, be intubated under general anesthesia, have surgery to make his stomach smaller, take off work for a month, go on a liquid diet for 8 weeks, get back on the Dietician's structured post op food program, change his portions to avoid throwing up everything if he eats too much, eat only the foods that the dietitian allows, start an exercise program and pay the portion of his medical bills that were not covered by his medical insurance.</span></div><div style="font-size: 13px;"><u style="font-size: medium;">.....or he could have gone on a Vegan diet, but that would have been too extreme.</u><u style="font-size: medium;"> </u></div><div style="font-size: 13px;"><u style="font-size: medium;"><br /></u></div><div> Our 50th reunion was delayed by a year and is being held at the end of this summer. Like everyone else, I've aged, but the clothes that I was wearing at our 40th reunion still fit! </div><div>How about you? If you have a special occasion you are looking forward to this summer and you want to look and feel your best, now is the time to get started. There is no magic pill, device or single ingredient that is going to help you get into shape and lose weight. Moderation is meaningless and arbitrary. The foods you eat are 90% of the problem. They have become an addiction, stimulating the pleasure centers of your brain, releasing Dopamine and making you want to feel that pleasure every time you eat. So continuing to eat the same things that got you and your body to where you are currently, but expecting different results is the definition of insanity. It's full of great information and great recipes as well. </div><div><br /></div><div><span><br /></span></div><div><span>Most of the food is not labeled "Vegan", because it's things like fresh produce, brown rice, whole grain pasta, tomatoes, colored peppers, carrots, cucumber, peas, lentils, baked beans, lima beans, chickpeas, broccoli, brussels sprouts, onions, garlic, mushrooms, sunflower seeds, chia seeds, peanuts, walnuts, cashews, corn, squash, flaxseed, citrus fruit, pears, apples, bananas, strawberries, blueberries, oatmeal, potatoes... You get the picture. The largest, strongest animals, like elephants, rhinos, hippos, giraffes, elk, panda bears, </span>gorillas and most apes are all plant based eaters. Even the largest dinosaurs were plant eaters. The plants are all nutritionally dense with all the protein, vitamins, carbohydrates, fats, iron and other minerals that you need with none of the cholesterol. Whole foods with no processed oil is the key. You can eat olives, but not olive oil. There are ethical vegans who don't want to hurt animals, environmental vegans who don't want to be part of damaging our planet with factory farms, and people like me who are more focused on personal health.</span></div></div><div style="text-align: left;"><span style="font-size: large;"> I was at least 100 lbs. over weight, taking a handful of pills every day, sedentary and not looking to change. At age 58, I was pretty set in my ways even though I knew I was a disaster waiting to happen. But after the sudden loss of a few friends and a 1st cousin to heart disease, the decision was made to make a change. It took me 3 months to learn enough about food choices to feel safe, a few weeks to gather about 10 recipes that would keep boredom away and about 4 weeks to realize that the change should have been made a long time ago! The weight fell off with no exercise and I was eating more food more often so I never got hungry. </span></div><div style="text-align: left;"><span style="font-size: large;"> The foods were NOT labelled "Vegan". They really, for the most part, had no label. Fresh fruits and vegetables are a lot cheaper than meat and processed foods. They are easy to prepare, especially if you like cutting and chopping. If you don't, there are lots of shortcuts. We already had a decent blender and a food processor. There are quick veggie choppers for a reasonable price that also save a lot of time. </span></div><div style="text-align: left;"><span style="font-size: large;"> Honestly, I was doing fantastic before the Pandemic. <u>After</u> losing 100lbs, running became my hobby. My favorite distance was 5K (3.1 miles) and I would do it 3 times a week. Over about 2 years, I pushed myself up to 10K (6.2 miles) and felt great! My doctor took me off all the blood pressure and cholesterol medications because I no longer needed any. Cooking became a passion. Before I knew it, there were 180 recipes in my notes for everything from oatmeal to lasagna! They are all written out on this blog. All you have to do is scroll through it and try some of them.</span></div><div style="text-align: left;"><span style="font-size: large;"> During the Pandemic, I became less strict in my food choices and some of the weight crept back. I gained 35lbs and stopped running. The gyms were closed due to Covid and we don't have a treadmill. I wasn't even eating any animal products, but foods with oil in them were everywhere! All oils are 120 calories per tablespoon, even olive oil, and they suppress my metabolism. </span></div><div style="text-align: left;"><span style="font-size: large;"> Now I'm working hard to get back into the routine, following my own advice and we will see what happens! A food journal helps. After eating anything, I write it down and look at it before I eat again. When my eyes tell my brain what I've already eaten, the choices become healthier and healthier! Eat foods that have low caloric density, lots of fiber and stick with things that you can make in your own kitchen from natural foods. You don't need to count calories or worry about protein. Contrary to popular opinion, plants have plenty of amino acids in them and your body strings them together to make human protein. That's what DNA is for! If you eat enough to make yourself feel satisfied, you are getting more than enough protein. I know first hand how painful it is. Plantar fasciitis is a common, painful problem. Heel spurs are associated with plantar fasciitis. Patients describe the pain as sharp or stabbing and it is generally worse when you first get up in the morning. After taking about 10 steps, it eases up. Add the onions and cook covered until caramelized, then uncover to cook off some of the water. Use a slotted spoon to transfer the mushrooms from the pan to a blender or food processor. Add the dry seasonings to the blender and run it but don't puree it. Press the water out of the tofu and crumble it into the pan. Add the lemon juice and tamari to the pan. Use a wooden spoon to stir the tofu and cook off the liquids like a tofu scramble. In a bowl, mix it all together adding some of the oat flour until it reaches the desired thickness and texture. Collard greens are broad leaf plants that are just perfect as a raw wrap or can
be cooked and stuffed like cabbage rolls. With a flavor that has notes of
radishes and almost twice as much calcium as spinach, they add a healthy little
zing to whatever filling you choose. Today I chose to soften them up by washing
and microwaving the leaves for 15 seconds. Using a sharp knife, I thinned out
the middle rib of the leaf making it much easier to roll. The filling is

The seasoning is perfect and the garlic is absolutely obnoxious. You may want to stay down wind from your family for a day or two. <div>No oil, no plant based milk and no nuts were used. I didn't have any fettuccini on hand but fortunately there was enough fusilli chickpea pasta in the cupboard to give it a go! I've got enough sauce left over for another batch, so I'm planning on watering it down a little and trying it in a fettuccini alfredo version. All I need is some whole wheat or gluten free fettuccini noodles and a pot to put it in.</div><div>As a friendly pasta reminder, after draining, put it back in the pot and then add your sauce while folding it in over low heat. This applies to tomato sauce as well. Boil the potato and the onion in water for 15 min or until soft. Save the water.</div><div>Put 1 cup of the starchy water and all the rest of the ingredients in a blender and blend until creamy. Add a little more water if needed. </div><div>Cook the pasta per package directions and drain it. (If using whole wheat pasta, add about 5 minutes to the recommended cooking time to make it softer.) Put it back in the pot and on low heat, mix in the alfredo sauce. Again add a little more of the starchy water if its too thick. </script><div><br /></div><div>Now it's 7 years later and having found my way out of that decaying life; reducing my risk for heart attack, stroke, prostate cancer and diabetes, a novel virus presents itself threatening the health of everyone. Having to stay home when I'm not working has kept me too inactive and too close to the refrigerator. Since last March I've managed to put back on about 15 lbs. Now its time to get serious again and make up the ground I've lost since the pandemic began. No more excuses! </div><div><br /></div><div>After investing so much time and effort to optimize my health through a major lifestyle change, it was an extremely easy decision to choose vaccination against the COVID-19 virus. I have a good friend in New York whose whole family got it and lost her husband after getting this virus, another friend who is currently recovering and lots of patients who either had it or lost multiple family members who succumbed to it. Its not something I wish to experience. </div><div>For the past 30 years, maybe longer, I've taken the flu vaccine with no side effects. I've also been vaccinated against Polio, Smallpox, Swine Flu, Tetanus, Diphtheria, Pertussis, Hepatitis and Shingles. As a child I've had Measles, Mumps Chickenpox and Rubella resulting in natural immunity to all of them. I've been trying it out. It's pretty versatile. Its actually an air fryer toaster oven made by <a href="https://www.bedbathandbeyond.com/store/product/cuisinart-reg-air-fryer-toaster-oven/5516132?skuId=61818064&enginename=google&mcid=PS_googlepla_brand_brand_local&product_id=61818064&adtype=pla_with_promotion&product_channel=local&adpos=&creative=233266395762&device=c&matchtype=&network=g&gclid=CjwKCAiA5IL-BRAzEiwA0lcWYqBngxq8lZcEmFjaqS4SPuFes3tjZW0vstWpTYeNWsYqZCWg1lQmUxoCHD4QAvD_BwE&gclsrc=aw.ds" target="_blank">Cuisinart</a>. So far, its been great for air fried potato wedges, but that was all I was using it for until yesterday when I burned a butternut squash casserole. Today I got right back up on that horse, turned the temperature down about 50 degrees lower than the included recipe book </span><span style="text-align: left;">recommended and made some air fried eggplant fingers. My recipes are all whole food plant based with unprocessed or minimally processed ingredients and no oil.</span> </div><div style="text-align: left;"> Why no oil? All cooking oils are processed foods with essentially no nutritional value and 120 calories per table spoon. I'm working hard to keep my weight under control and 120 calories per tablespoon adds up quickly. Eight years ago I weighed 284lbs, went on a conventional diet and lost 10lbs over the period of a year. It was a yo-yo year with ups and downs but the net loss over that year was only 10lbs. Seven years ago I learned about the whole foods plant based no oil lifestyle and that year I lost 80lbs. By the middle of the 2nd year I'd lost a total of 110lbs and now, seven years later and in the middle of a pandemic, I'm still down 110lbs. I'm not counting calories, protein, carbs, fats, micro or macro nutrients either. I'm eating more food more often that I used to and the weight is staying put as long as I stay away from all animal products and all processed oils. I get my essential fatty acids from whole foods, like milled flaxseeds, chia seeds, a couple of walnuts or a palmful of raw sunflower seeds or pumpkin seeds. Occasionally about 1/5th to 1/3rd of an avocado gets included in a salad and that's about it for the unprocessed whole foods that contain significant oil. It also helps to know that processed oils damage your circulatory system by irritating the endothelial lining of every blood vessel in your body including those in your heart and your brain. That single cell thick lining produces a vasodilator known as Nitric Oxide (NO) that relaxes your blood vessels, dilates them and lowers your blood pressure. By loosing weight and eliminating oils my BP went from 140/90 seven years ago to 108/68 now with no medication. So say "NO" to oils!</div><div style="text-align: left;"><br /></div><div style="text-align: left;"><b><u>RECIPE</u></b></div><div style="text-align: left;"><b><u><br /></u></b></div><div style="text-align: left;">1 Medium size eggplant</div><div style="text-align: left;">3 Flax eggs (3T milled flaxseeds and 9 T water. Combine and let it sit for 15 minutes)</div><div style="text-align: left;">3T Nutritional yeast</div><div style="text-align: left;">6 T Flour (I used corn flour, but only because it was looking at me sadly saying "Pick Me!")</div><div style="text-align: left;"><span face="Roboto, arial, sans-serif" style="background-color: white; color: #5f6368; font-size: 14px; font-weight: bold;">1/2</span> t Garlic salt</div><div style="text-align: left;">1 t Ground mustard seeds</div><div style="text-align: left;">2 t Garam Masala</div><div style="text-align: left;">... really any seasoning of your choice</div><div style="text-align: left;"><br /></div><div style="text-align: left;">Pre-Heat your Air Fryer at 350F or your oven at 400F.</div><div style="text-align: left;">Make the flax egg mixture per the above directions and set aside.</div><div style="text-align: left;">Mix together all the dry ingredients.</div><div style="text-align: left;">Slice the eggplant into approximately 0.5 x 0.5 x 6 inch pieces.</div><div style="text-align: left;">Dip the slices into the flax egg and then coat them with the dry ingredients.</div><div style="text-align: left;">Place them in a single layer in your air fryer on parchment paper or bake them in your oven on a parchment paper lined pan.</div><div style="text-align: left;">Cook for 10 minutes in the air fryer or until they begin to brown in the regular oven. Flip them and cook for 10 more minutes or until they darken. I'd seen it before but never bothered to read the label, thinking that it has to have processed oil in it. WRONG! No processed oil! The little bit of fat in it comes as a part of the sesame seeds and chickpeas (whole foods). You don't have to add any oil or fry it either. I baked it at 410F for 30 min and it turned out pretty great! Simple to make too. It's already seasoned and everything in it is stuff I could have put together from my cabinet. This just saved a little time. Of course, being me, I couldn't just leave it at that. There was a whole head of cauliflower starting to look dodgy in my fridge. All I did was pulse it in my blender to make it riced and used some of that to lighten the recipe a little.</div><div>Our son and I gave it 2 thumbs up, so here's my recipe...</div><div><br /></div><div>1 box of Zayad Falafel Mix (about 2 cups) </div><div>1 cup of riced cauliflower </div><div>1/4th cup of coconut aminos</div><div>1.5 cups cold water</div><div><br /></div><div>Mix it all together and let it sit, covered for 30 minutes. Wet hands and form 1/4 cup at a time of the mixture into balls. I found an interesting Plant Based omelette recipe this week, saved it and for once didn't lose it. My cabinet was already bulging with the ingredients I needed to modify and complete the meal, including my own version of cheezy sauce in the fridge. The original recipe called for chickpea flour. That I didn't have. I did have buckwheat flour, which is darker, but filled the bill just fine. All I needed was a non-stick pan and I have a stack of those. So here we go!</div><div class="separator" style="clear: both; text-align: left;">First the cheezy sauce:</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;"><b style="font-size: x-large;"><u>Recipe</u></b></div><div class="separator" style="clear: both; text-align: left;">3 medium large redskin potatoes<br /><div>6 TBSP Nutritional yeast</div><div>5 TBSP Tapioca flour</div><div>1 TBS lemon juice<br />1/4 cup white vinegar<br />1/4 tsp Tabasco </div><div>1 TBSP salt</div><div>1/4 tsp Turmeric</div><div>1/4 tsp smoked paprika<br />1 3/4 cups of starchy water from the boiled potatoes<br /><br /></div><div>Peel, cube and boil the potatoes in at least 2 cups of water with the TBSP of salt. Way more sauce than you need, but it's versatile and stores well in the fridge for at least 2 weeks. Gently loosen it, flip it so there are no soft spots and flip it back again. Mix 1/3 cup of the mixed veggies and cheezy sauce together and spread it out to make a filling. Fold the omelette in half and place it on a plate.
